The Montclair Fund for Educational Excellence supports more than 60 students through multilingual after school tutoring programs, Oruguitas (K - 5 students) and Entrenadores Escolares (6 - 12 graders). Here, weekend program coordinator Lesley Xicotencatl, talks about Paleta Aleta – one of MFEE’s newest project-based learning programs aimed at teens – and how it is in keeping with the organization’s mission to remove barriers to learning and create equitable access for Montclair kids.

Q: How did this program start?
Paleta Aleta evolved from Entrenadores Empresarios, our summer entrepreneurship program, where Montclair High School students learned the fundamentals of starting and managing a business. Seeing their enthusiasm and creativity, we wanted to provide a year-round opportunity for them to apply their skills in a real-world setting. It’s run by me, MFEE’s Executive Director Masiel Rodriquez-Vars, and Ruth Davis, an entrepreneurial executive and volunteer.
Q: What does the program involve?
The program covers all aspects of running a business, including product development, branding, budgeting, customer service, and sales strategies. Students work collaboratively to make decisions, troubleshoot challenges, and track their progress throughout the year.
Q: What is a paleta?
A paleta is a traditional Mexican frozen treat, similar to a popsicle, but made with natural ingredients like fresh fruit, dairy, or juice. They come in a variety of delicious flavors and are handcrafted!
Q: How many teens participate?
We have 10 students working on this project. Each student plays a unique role, from production and marketing to sales and finance, ensuring that the business runs smoothly.
The teens had their first sale outside of MHS to test their products. The students who make up the logistics team are currently looking for opportunities to collaborate with community events and farmers' markets to expand their reach. For updates about sales and new products, you can follow @the_real_paletaleta on Instagram.
Q: Where do the proceeds go?
All proceeds go back to MFEE to support future student-led businesses, purchase materials, and invest in expanding Paleta Aleta. Donations to support this project are welcome.
Q: Why is entrepreneurship an important learning tool?
Entrepreneurship teaches valuable life skills such as problem-solving, teamwork, financial literacy, and leadership. It empowers students to think creatively, take initiative, and develop resilience—qualities that will benefit them no matter what career path they choose.
Q: What has been the reaction from students?
The students love the hands-on experience and the independence they have in making their business a success. It’s helped them gain confidence, develop leadership skills, and think about their future careers in a new way.
Q: How can I purchase these delicious paletas and/or donate to support this work?

Q: What has been the reaction from students?
In their own worlds, this is how our teens described their business:
“Paleta Aleta symbolizes the wings we were gifted upon arriving in this country—wings that carry us toward not just new opportunities, but a bold, transformative new beginning.
Our mission? To celebrate the beauty of diversity. Through our delicious, one-of-a-kind products, we’re sharing the flavors of our cultures with you, each bite a reminder of how different communities come together to create something truly special.
Every flavor tells a story, and every product is made with love, passion, and the energy of our collective dreams. Join us in embracing our shared humanity and savoring the magic that happens when cultures connect.
All of us have been through tough times, but thanks to this organization we’ve come together as a family. Let’s celebrate diversity—one delicious taste at a time!”
We’re incredibly proud of our Entrenadores Empresarios and the dedication they’ve shown to building their business. This program not only teaches entrepreneurship but also fosters community engagement and social responsibility. We hope to continue expanding opportunities for students to develop their ideas and turn them into thriving businesses!
